An appetizer perfect for an evening with loved ones. Fry pita chips in the oven, brushed with olive oil and rolled in spices, and serve with a hearty Middle Eastern and Arabic-inspired mashed potato dip. For the mashed potato dip, you'll need canned white beans, tahini, spices, and anchovies, which will enhance the flavor and aroma of the mashed potato. Blend everything together and enjoy dipping crispy pita bread into the mouth-watering mashed potato dip.


Ingredients:


Pita with Za'atar seasoning
  • 4 pitas
  • 2 tsp ground cumin
  • 2 tsp za'atar
  • 1 teaspoon chili seasoning
  • 1 teaspoon granulated garlic
  • 2 tbsp. l. olive oil

White Bean and Tahini Dip
  • 8 white anchovy fillets, drained
  • 1/4 cup olive oil
  • 2 cloves garlic, crushed
  • 1 can (425 g) canned white beans, drained and rinsed
  • 0.5 tbsp. tahini paste
  • 1/4 cup chicken broth
  • 1 teaspoon coarse salt
  • 0.5 tsp red pepper flakes
  • 3-4 grinds of black pepper
  • Juice and zest of 1 lemon
  • 1/4 cup chopped chives
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • Pita chips: In a small bowl, combine cumin, za'atar, chili seasoning and granulated garlic. Brush both sides of the pitas with olive oil; cut each into 8 triangles. Roll them in the spice mixture until completely coated, then arrange them on a baking sheet. Bake in the oven until golden brown and crispy, 14 to 16 minutes. Cool on a plate lined with paper towels.

  • White Bean and Tahini PureePlace the anchovies on a small baking sheet and bake in the oven for 6-8 minutes. In a large skillet over medium-high heat, sauté the garlic, white beans, and baked anchovies in olive oil. Cook, stirring frequently, for 4-6 minutes. Transfer to a food processor and add the tahini, chicken broth, salt, red pepper flakes, black pepper, and lemon juice and zest. Puree until smooth.

  • Transfer the white bean and tahini puree to a serving bowl and garnish with chives. Serve the dip immediately. pita chips seasoned with za'atar mixture.
