Ingredients:

  • 2 cups young arugula
  • 1 stalk celery, cut into three pieces
  • 1 small carrot, cut into three pieces
  • 4 green onions, cut into three pieces
  • 1 small clove of garlic
  • 1 tbsp coarsely chopped fresh tarragon, dill, basil, or parsley
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 120 gr. curd cheese
  • 2 cups vegetable chips (pumpkin, radish, sweet potato, parsnip, carrot, beet, turnip, or rutabaga), finely chopped
  • Coarse salt and freshly ground pepper
  • Fresh vegetables, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the arugula, celery, carrots, green onions, garlic, and tarragon in a food processor. Process until almost smooth.
  • Step 2
  • Add sour cream, mayonnaise, and cream cheese to a food processor and blend. Add crushed chips and blend again until smooth. Season with salt and pepper. Transfer the dip to a bowl and chill for 30 minutes to 8 hours. Serve with vegetables.
