Shrimp scampi is an Italian-American dish consisting of shrimp cooked in a sauce made with butter, garlic, dry white wine, and Parmesan cheese. While shrimp scampi is typically served with pasta or rice, it's equally delicious served as a thick, cheesy dip, perfect for dipping on bread or crackers. Toss shrimp scampi with the cheese sauce, sprinkle with breadcrumbs, and bake for a rich, creamy dip topped with a crispy crust.


Ingredients:

  • 220 g of cream cheese at room temperature
  • 1 tbsp. grated mozzarella
  • 1 cup sour cream
  • 0.5 cup mayonnaise
  • 0.5 tbsp. grated parmesan
  • 4 tbsp. breadcrumbs
  • 2 tbsp (30 g) butter + 1 tbsp melted butter
  • 450 g large shrimp, peeled, deveined and cut into 0.5 cm pieces.
  • 6 cloves garlic, thinly sliced
  • A large pinch of red pepper flakes
  • 0.5 cups dry white wine
  • 0.5 cup chopped parsley leaves
  • 1 teaspoon lemon zest
  • Slices of crusty bread and/or crackers, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position a rack in the upper third of the oven and preheat the oven to 190°C.
  • Step 2
  • In a large bowl, beat the cream cheese, mozzarella, sour cream, mayonnaise, Parmesan, 2 tablespoons breadcrumbs, and 1/2 teaspoon salt with a mixer on medium-high speed until smooth. Cover and refrigerate until ready to add the shrimp.
  • Step 3
  • In a large skillet, melt 2 tablespoons (30 grams) butter over medium-low heat. Add the shrimp, garlic, 1/4 teaspoon salt, and red pepper flakes and cook, stirring frequently, until the shrimp begin to turn pink, about 2 minutes. Add the wine, bring to a simmer, and cook until the shrimp are pink and cooked through, about 2 minutes (there will be some liquid remaining in the pan). Remove the skillet from the heat and let the shrimp cool completely.
  • Step 4
  • Meanwhile, in a small bowl, combine the parsley, remaining 2 tablespoons. breadcrumbs and 1 tbsp melted butter, lemon zest and a pinch of salt.
  • Step 5
  • Combine the shrimp, pan sauce, and cream cheese mixture; transfer to a 2-quart baking dish. (At this point, the dip and breadcrumb mixture can be separately covered and refrigerated overnight.) Sprinkle the breadcrumb mixture over the dip and bake until heated through and bubbling, 15 to 20 minutes. Turn the oven to broil and bake until golden brown, 1 to 3 minutes. Let rest for a few minutes, then serve the dip hot with bread and/or crackers.
