Shrimp scampi is a staple on the menu of every good Italian-American restaurant. When cooked properly, it should be buttery, with hints of lemon and garlic. Shrimp scampi is loved for its simplicity and balanced flavor, and it's actually very easy to prepare. The white wine sauce gets a piquant flavor from red pepper flakes, and it's perfect served with good crusty bread or pasta.

Ingredients:

  • 700 g king prawns, peeled, deveined, with tails
  • 6 tablespoons unsalted butter
  • 1 tbsp grated garlic (about 3 cloves)
  • 1 teaspoon crushed red pepper flakes
  • 1/3 cup dry white wine
  • 2 tablespoons freshly squeezed lemon juice from about 1 lemon
  • 1 tbsp chopped parsley leaves + extra for serving
  • Bread or pasta to serve
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat a large nonstick skillet over medium heat. Pat the shrimp dry with paper towels and season with salt and pepper.
  • Step 2
  • Melt 2 tablespoons of butter in a skillet. Add half of the shrimp and cook until golden brown and pink, about 2 minutes per side. Transfer the shrimp to a bowl. Melt another 1 tablespoon of butter in the skillet and cook the remaining shrimp.
  • Step 3
  • Return the pan to medium heat. Add 1 tablespoon of butter and let it melt. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
  • Step 4
  • Add the wine and lemon juice. Increase the heat to high and simmer until the sauce thickens slightly, about 1 minute. Remove the pan from the heat and stir in the remaining 2 tablespoons butter and parsley. Return the shrimp to the pan and toss to coat. Transfer to a serving platter and sprinkle with parsley. Serve with bread or pasta.
