Treat your loved ones to a unique Mexican-inspired dinner and make healthy turkey tacos. For the taco filling, you'll need raw turkey sausage. Simply remove the casings and sauté the sausage with onions, carrots, and tomatoes, adding a little chili powder for a spicier, more zesty flavor typical of Mexican cuisine. Serve the meat filling in crispy taco pockets with shredded lettuce, grated cheddar, and a fresh mango-tomato salsa.

Ingredients for the recipe:
- 600 g raw turkey sausages, casings removed
- 12 crispy taco pockets
- 2 tbsp. l. olive oil
- 1 carrot, grated
- 3 green onions, chopped (white parts separated from green parts)
- 1-2 tsp ancho chili powder + extra for sprinkling
- 2 cups cherry tomatoes, quartered
- 1 mango, diced
- Juice of 1 lime
- 1/4 head of romaine cabbage, shredded
- 1 cup grated cheddar (about 100 g)

Cooking the dish according to the recipe:
- Preheat oven to 160°C.
- Heat the olive oil in a large skillet over medium-high heat. Add the carrots, white parts of the green onion, chili powder, and half the tomatoes. Cook until the tomatoes release their juices, about 3 minutes. Add the sausage and cook, breaking up the pieces, until they begin to brown, about 5 minutes. Add half the green onions and cook until most of the liquid has evaporated, about 5 minutes.
- Meanwhile, place the taco pockets on a baking sheet and warm in the oven for about 6 minutes. In a medium bowl, combine the mango with lime juice; sprinkle with chili powder. Add the remaining tomatoes and green onions and toss to combine.
- Fill taco pockets with the meat mixture and top with lettuce, cheese, and mango salsa.
