This blend of glossy, plump, and delicious olives in a citrusy, spicy olive oil is a perfect appetizer for parties and celebrations. For a striking presentation, mix several varieties of black and green olives. Serve them on the table while you continue to mingle with your guests.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 tbsp. l. olive oil
  • 2 cloves garlic, crushed
  • 1.5 tsp crushed red pepper flakes
  • 1 large sprig of fresh rosemary, 2 bay leaves, or both
  • Zest of 1 orange, peeled into long strips with a vegetable peeler
  • Zest of 1 lemon, peeled into long strips with a vegetable peeler
  • 350 gr. mixtures of olives, such as kalamata, nicoise and/or cerignola
  • 0.5 tsp coarse salt

Cooking the dish according to the recipe:


  1. In a medium skillet, combine olive oil, garlic, red pepper flakes, herbs, and citrus zest. Heat over medium heat, swirling the pan, until fragrant, 3-4 minutes.
  2. Add the olives, season with salt and pepper, and cook, stirring occasionally, until the garlic is golden and the zest begins to curl, about 5 more minutes. If you used a bay leaf, remove it from the mixture. Serve the olives warm or at room temperature.
