Spelt with sautéed turnips, onions, and apple is a wonderful autumn dish, bursting with flavor. Both the turnips themselves and their fresh greens are used in the preparation. The apple and onion create a sweet, spicy flavor that pairs beautifully with the nutty notes of the spelt.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 and 1/4 cups polished spelt
  • 1 tbsp. l. olive oil
  • 1 small onion, thinly sliced
  • 1 tbsp unsalted butter
  • 1 medium turnip, cut into 1 cm pieces, + chopped tops
  • 1 red apple, cut into 2cm pieces.
  • 1 pinch crushed red pepper flakes

Cooking the dish according to the recipe:


  1. Bring a medium saucepan of salted water to a boil. Add the spelt and cook, stirring occasionally, until al dente, about 25 minutes; drain.
  2. Meanwhile, heat the oil in a large skillet over medium-high heat. Reduce the heat to medium, add the onion and a pinch of salt, and cook, stirring frequently, until the onion is soft and light golden, about 15 minutes.

  3. Increase the heat to medium-high and add the butter. Once melted, add the turnips, herbs, and apple and cook, stirring, until softened and browned, another 10–12 minutes.
  4. Add the spelt and red pepper to the pan and stir. Season with salt and serve warm.
