Cooking the dish according to the recipe:
- In a medium saucepan, cover the rice with 1 3/4 cups water and add 1/4 teaspoon salt. Bring to a boil over medium-high heat, then cover, reduce heat, and simmer until all the water is absorbed and the rice is tender, about 30 minutes.
- Turn off the heat and let sit, covered, for 10 minutes. Fluff the black rice with a fork, season with salt, and serve.
