This simple chocolate pudding is made with chopped dark chocolate, low-fat milk, cocoa powder, and a small amount of agave nectar as a sweetener. All ingredients are simmered until the chocolate is completely melted, then the pudding is chilled overnight in the refrigerator. Chia seeds add extra texture. Not only do they provide a pleasant contrast to the velvety pudding, but they also provide essential omega-3 fatty acids, antioxidants, and the dietary fiber that chia seeds are so rich in. Cooking the dish according to the recipe:
- In a medium saucepan, combine the milk, chocolate, cocoa powder, agave nectar, and a pinch of salt. Cook over medium-low heat, whisking constantly, until the chocolate is melted and the cocoa is dissolved, 6-8 minutes. Pour into a medium bowl.
- Stir in the chia seeds and vanilla. Cool, stirring every 10 minutes, to room temperature for 1 hour. Then cover and refrigerate for 8 hours.
