A tender, ripe avocado makes a wonderful ingredient for delicious soda bread. It's packed with healthy fats that can replace butter or oil in baked goods, making them soft and fluffy. Not to mention the unusual and pleasant green color the avocado imparts to the bread. The bread has a slightly sweet taste with a subtle vegetable flavor. It's perfect for breakfast or snacking. Spread with butter or jam and enjoy.

Ingredients for the recipe:
- 2 cups of flour
- 1.5 tsp baking powder
- 0.5 tsp of soda
- 0.5 tsp coarse salt
- 1 large ripe avocado
- 1 teaspoon lemon juice
- 3/4 cup sugar
- 0.5 cups low-fat cream
- 0.5 tsp vanilla extract
- 1 large egg

Cooking the dish according to the recipe:
- Preheat oven to 375°F (190°C). Spray a 9 x 5-inch loaf pan with cooking spray.
- In a bowl, whisk together flour, baking powder, baking soda and salt.
- In a large bowl, thoroughly mash the avocado with lemon juice. Add the sugar, cream, vanilla, and egg and mix. Add the flour mixture and knead into a dough.
- Pour the batter into the prepared pan and bake until golden brown on top and a toothpick inserted into the center comes out clean, 45-55 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely.
