Fricos are thin, crispy, lacy cheese wafers originating from Italy. To make them, grated cheese is spread in small mounds on a lined baking sheet, then baked in the oven, forming crisp, crispy cheese chips. They are made using Parmesan cheese, complemented by chopped basil and grated lemon zest. The flavor and aroma are exquisite. Once set, fricos can be served as a standalone appetizer or used to garnish more complex appetizers, salads, and main courses, giving them a sophisticated look.

Cooking the dish according to the recipe:
- Preheat oven to 200°C.
- Combine Parmesan, basil and lemon zest in a bowl.
- Place heaping tablespoons of the cheese mixture on a parchment-lined or silicone-lined baking sheet and smooth it lightly. A silicone baking mat is best for this recipe. Repeat with the remaining cheese mixture, spacing the heaping tablespoons about 1/2 inch apart.
- Bake for 3-5 minutes, or until golden brown and crispy. Let cool, then transfer to a serving platter with a flat spatula.
