In just 20 minutes, Giada De Laurentiis creates a complete dinner that's easy to prepare on a Sunday night. Each serving is packed with healthy ingredients: nutrient-rich spinach, whole-wheat pasta with garlic and capers, and baked salmon.


Ingredients:

  • 225 g whole-wheat spaghetti
  • 4 pieces (110 g each) of salmon
  • 2 cups fresh baby spinach leaves
  • 1 crushed clove of garlic
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon salt, plus a little more
  • 1/2 teaspoon freshly ground black pepper, plus more
  • 1 tbsp. l. olive oil
  • 1/4 cup chopped fresh basil leaves
  • 3 tbsp capers
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a saucepan of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally, until tender but firm, 8-10 minutes. Drain in a colander and transfer to a large bowl. Add the garlic, olive oil, salt, and pepper. Mix well.
  • Step 2
  • While the pasta is cooking, heat the olive oil in a medium skillet over medium-high heat. Season the salmon pieces with salt and pepper. Add the fish to the skillet and cook until medium-rare, about 2 minutes per side, depending on the thickness of the fish. Remove the fish from the skillet.
  • Step 3
  • Add basil, capers, and lemon zest to the pasta mixture and toss. Line 4 serving plates or shallow bowls. Place 1/2 cup spinach in each plate. Top with 1/4 of the spaghetti. Place a piece of salmon on top of the pasta. Serve immediately.
