This one-pot pasta is perfect for beginners: all the ingredients except the cheese are added to the pot, and magically, you have pasta in a delicious fresh (not store-bought!) sauce. In addition to fresh tomatoes, a tiny bit of tomato paste is added for a rich flavor in case the tomatoes aren't the ripest and sweetest. Sprinkle the finished pasta with grated Parmesan cheese and enjoy your quick dinner, a great way to avoid a mountain of dirty dishes.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 340 g spaghetti, broken in half
  • 3 tbsp. l. olive oil
  • 1 tbsp tomato paste
  • 4 cloves garlic, thinly sliced
  • 2 medium tomatoes, coarsely chopped
  • A handful of fresh basil leaves, plus extra for serving
  • A large pinch of red pepper flakes
  • 0.5 cup grated Parmesan + extra for serving

Cooking the dish according to the recipe:

  1. Combine the spaghetti, olive oil, tomato paste, garlic, tomatoes, basil, red pepper flakes, and 1 teaspoon salt in a medium skillet with high sides. Add 5 cups of water and bring to a boil over medium-high heat. Continue cooking, stirring frequently to prevent the spaghetti from sticking, until al dente and the sauce has thickened, 6-8 minutes.
  2. Add the Parmesan (the sauce will thicken even more) and season with salt to taste, if needed. Divide the spaghetti among four plates and sprinkle with additional Parmesan and basil.
