To make delicious Italian pasta without the hassle, all you need is spaghetti, canned tomatoes in their own juice, fresh basil, and a few spices. The flavor and aroma are luxurious; the combination of sweet tomatoes, spicy garlic, and fragrant basil makes this simple dish truly Italian and reminiscent of sunny summer any time of year. This recipe uses San Marzano tomatoes, which are sweeter than other varieties. Serve the pasta sprinkled with Parmesan cheese. Optionally, you can enhance the basic tomato sauce with other ingredients: crispy bacon, shrimp, or a handful of spinach.


Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 4 cloves garlic, thinly sliced
  • A pinch of crushed red pepper flakes
  • 1 can (800 g) whole peeled San Marzano tomatoes in their own juice, crushed by hand
  • 1 cup torn basil leaves
  • 340 g spaghetti
  • Grated Parmesan, optional
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large saucepan, bring salted water to a boil.
  • Step 2
  • In a large skillet over medium heat, heat the olive oil, garlic, 1/2 teaspoon salt, and red pepper flakes, stirring until the oil is hot and the garlic begins to brown, 4 to 6 minutes.
  • Step 3
  • Add the tomatoes; rinse the jar with about 1 cup of water and pour the water into the pan. Add the basil, increase the heat to medium-high, and simmer until the sauce thickens, 15-20 minutes.
  • Step 4
  • Meanwhile, add spaghetti to boiling water and cook according to package directions; drain thoroughly.

    Add the cooked spaghetti to the sauce and toss to coat completely. Sprinkle with Parmesan cheese, if desired.
