Fried rice with corn

This Asian stir-fry side dish, in addition to rice and corn, also contains separately fried scrambled eggs, green onions, garlic, and spices. The flavor is complex and rich. It requires cooked rice, so it's a great opportunity to create something new, perhaps with leftover rice from last night's dinner. Serve it as a side dish with meat or make it into a hearty, nutritious breakfast.

In a frying pan over high heat, stir-fry 1 beaten egg in peanut oil; transfer to a plate. Heat more peanut oil in the pan. Add 4 chopped green onions, 1 crushed garlic clove, 1/2 teaspoon sugar, and salt to taste; fry for 30 seconds. Add 1 tablespoon Chinese rice wine and 1 cup frozen corn (defrosted first); fry for 1 minute. Add 2 cups cooked rice and stir-fry for 3 minutes. Add the scrambled eggs and season with salt to taste.
