The sauce for this pasta is made from canned crushed tomatoes, simmered with roasted garlic, sliced zucchini, and red pepper flakes, adding a zesty flavor. Stir in separately cooked capellini pasta (also known as "angel hair"), and this quick vegetarian pasta is ready. It's delicious, juicy, and healthy. Omit the Parmesan when serving, and you've got a perfect Lenten dish.
