Time: 3 hours.
Complexity: easily
Quantity: 16 slices

Sweet and spicy candied bacon with a savory cayenne pepper flavor is a favorite snack that pairs well with alcoholic beverages, including beer. Before candied, the bacon slices are soaked in tequila for several hours, which softens and enhances their flavor. Sprinkle them with brown sugar and spices and bake in the oven until the sugar mixture forms a glaze. Let the bacon cool before handling to avoid burning yourself with melted sugar.

Cooking the dish according to the recipe:

  1. Soak 1 pound of bacon in 1 cup of tequila and refrigerate for 2-8 hours. Drain the tequila and pat the bacon dry.
  2. Preheat oven to 350°F (175°C). On a large plate, combine 1 cup light brown sugar, 1 teaspoon ground ancho chili, and 1/4 heaping teaspoon cayenne pepper; spread into an even layer.

  3. Roll the bacon strips in the sugar mixture, pressing them in until they adhere. Place the coated bacon on two parchment-lined baking sheets. Sprinkle with the remaining sugar mixture.
  4. Bake for 15 minutes, flip the bacon, and continue baking until golden and glazed, another 15 to 20 minutes (the bacon will still be pliable). Transfer to a wire rack and let cool; the bacon will be firm but not very crisp.
