Cornbread is a traditional baked good in the American South, where it's served as a side dish with virtually any meal. This classic cornbread recipe is simple: flour (both wheat and corn), butter, a little sugar, eggs, and milk. Baked without yeast, with baking powder, the bread turns out soft and fluffy, and a pinch of cayenne pepper perfectly balances its corny sweetness.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 110g unsalted butter, melted, plus extra for greasing the pan
  • 2 cups yellow corn flour
  • 1 cup premium flour
  • 1/4 cup sugar
  • 4 tsp baking powder
  • A pinch of cayenne pepper
  • 1/4 teaspoon fine salt
  • 1.5 cups of milk
  • 2 large eggs

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C. Grease the inside of a 22cm round cake tin with melted butter.

    Note

    When measuring flour, spoon it into a dry measuring cup and remove any excess. Scooping flour directly from the bag with a measuring cup will compact it, resulting in dry baked goods.
  2. In a large bowl, whisk together the cornflour, wheat flour, sugar, baking powder, cayenne pepper, and salt. In a medium bowl, whisk together the milk and eggs. Pour the milk mixture into the flour mixture and mix until smooth, then add the melted butter.

  3. Transfer the batter to the prepared pan and spread into an even layer. Bake until the cornbread is lightly browned and a toothpick inserted into the center comes out clean, 30-35 minutes. Serve warm or at room temperature.
