Cornbread is a traditional baked good in the American South, where it's served as a side dish with virtually any meal. This classic cornbread recipe is simple: flour (both wheat and corn), butter, a little sugar, eggs, and milk. Baked without yeast, with baking powder, the bread turns out soft and fluffy, and a pinch of cayenne pepper perfectly balances its corny sweetness.

- 110g unsalted butter, melted, plus extra for greasing the pan
- 2 cups yellow corn flour
- 1 cup premium flour
- 1/4 cup sugar
- 4 tsp baking powder
- A pinch of cayenne pepper
- 1/4 teaspoon fine salt
- 1.5 cups of milk
- 2 large eggs

Cooking the dish according to the recipe:
- Preheat oven to 200°C. Grease the inside of a 22cm round cake tin with melted butter.
Note
When measuring flour, spoon it into a dry measuring cup and remove any excess. Scooping flour directly from the bag with a measuring cup will compact it, resulting in dry baked goods. - In a large bowl, whisk together the cornflour, wheat flour, sugar, baking powder, cayenne pepper, and salt. In a medium bowl, whisk together the milk and eggs. Pour the milk mixture into the flour mixture and mix until smooth, then add the melted butter.
- Transfer the batter to the prepared pan and spread into an even layer. Bake until the cornbread is lightly browned and a toothpick inserted into the center comes out clean, 30-35 minutes. Serve warm or at room temperature.
