Indian lassi is a refreshing drink for hot summer days. This version is made with almond milk and cashews, is lactose-free, and is suitable for everyone. Fresh apples, a touch of honey, and aromatic spices imbue it with the aromas of apple pie. For a more complex flavor, use both tart and sweet apples. Enjoy lassi well-chilled with ice.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 0.5 cup raw cashews
  • 2 cups vanilla almond milk
  • 2 apples (preferably 1 Granny Smith and 1 Honeycrisp), cored and cut into pieces
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 0.5 tsp apple pie spice mix + extra for sprinkling

Cooking the dish according to the recipe:


  1. Place cashews in a bowl, pour in 1 cup almond milk and let sit for 8 hours or overnight in the refrigerator.
