We offer a collection of dozens of kebab recipes that can be cooked (and served!) on skewers.

How to cook kebab
1. Cut the ingredients into pieces equal size and cook as directed in the recipe. If using a marinade, refrigerate fish for 1 hour, and meat and game for several hours or overnight.
2. Preheat the grill to high temperature. Thread ingredients onto skewers.
3. Fry the kebab, turning, until lightly charred around the edges and cooked to your liking, 3 to 15 minutes.
If you are using wooden skewers, soak them in water for 20 minutes before grilling.
1. Steakhouse KebabPrepare the marinade using 3 tablespoons of olive oil and 1 tablespoon each of soy sauce, Worcestershire sauce, chopped parsley, and thyme. Season with salt and pepper and marinate the diced beef (loin). Thread onto skewers along with onions, mushrooms, and boiled potatoes and grill the kebabs.
2. Korean beefMarinate thinly sliced short ribs with scallions in a mixture of 1/3 cup each sugar and white wine, 3 tablespoons sesame oil, 1/2 cup soy sauce, 2 crushed garlic cloves, and 1 grated Asian pear. Skewer the short ribs so they lie flat and grill.
3. Beef koftaCombine 1 pound ground beef, 2 minced shallots, 3 minced garlic cloves, 1/2 cup chopped parsley, 2 teaspoons each cumin, coriander, paprika, and dried mint, and 1/2 teaspoon cinnamon. Form into 1-inch balls, thread, and grill the kebabs.
4. Stuffed peppers on skewersPrepare the beef kofta mixture (No. 3), adding 1/2 cup chopped olives. Stuff small, cored bell peppers with the mixture. Thread onto skewers and brush with olive oil. Grill, seasoning with salt and drizzling with lemon juice.
5. Beef kebab with herbsMarinate diced beef (loin) in 1/2 cup olive oil with a crushed garlic clove, a pinch of salt, a pinch of red pepper flakes, and various torn herbs. Thread onto skewers and grill.

7. Beef Kebab with ChiliToss diced ground beef (sirloin) with 3 tablespoons brown sugar, 3 tablespoons chili powder, 1 teaspoon salt, 1/2 teaspoon each fresh thyme and pepper. Marinate the meat. Thread onto skewers and grill, brushing with a mixture of 1/4 cup apple cider vinegar, 1/4 cup brown sugar, and 1 teaspoon salt. chili powder.

9. Hungarian beefMarinate diced beef in a mixture of 1/2 cup olive oil, 2 crushed garlic cloves, a pinch of salt, 1/2 teaspoon paprika, and 2 teaspoons crushed cumin seeds. Thread onto skewers with sliced onion and bell pepper, and grill.

11. BBQ PorkThread the diced pork loin onto skewers and grill, brushing barbecue sauce.
12. Cajun Pork KebabRub diced pork loin with 3 tablespoons brown sugar and 2 tablespoons Cajun sauceMarinate. Thread onto skewers and grill, brushing with a mixture of 1/4 cup apple cider vinegar and 1/4 cup brown sugar. Dip the finished pieces in Cajun sauce.
13. Pork curry. Mix 2/3 cup into puree. coconut milk, 1 tbsp. Thai curry paste and lime juice, 3 tablespoons peanut butter, and salt. Marinate the diced pork loin in half the sauce. Skewer and grill, serving with the remaining sauce.
14. Pork with fennelSprinkle the cubed loin with ground fennel seeds and salt, and brush with olive oil. Thread onto skewers with large pieces of bell pepper. Grill, brushing with lemon juice.
15. Pork kebab with pumpkinThread the diced pork loin and blanched butternut squash onto skewers. Season with cilantro. Grill, brushing with a mixture of 2 tablespoons sherry vinegar, 1/4 cup maple syrup, chipotle hot sauce and salt to taste.
16. Thai-style pork kebabCombine 450g of ground pork, 3 tbsp each chopped mint, cilantro, and basil, 1 minced shallot, 1 minced hot chili pepper, 2 tbsp each fish sauce and lime juice. Form into 5cm ovals, thread on the ends, and grill. Serve with the pieces dipped in fish dip sauce.
17. Pork kofta with sesame seedsCombine 450g of ground pork, 2 chopped green onions, 2 teaspoons each of soy sauce, grated garlic, and grated ginger, 1/2 teaspoon each of sesame oil and salt. Form 2.5cm balls and roll in sesame seeds, then thread onto skewers and grill.

19. Classic lamb kebabToss diced leg of lamb with 1 grated onion, 1/3 cup olive oil, salt, and pepper. Thread onto skewers with lemon slices, onion, and bell pepper, and grill.
20. Indian-style lambMix 1 cup plain yogurt, 1/2 cup each chopped onion and cilantro, 2 tbsp. garam masala spices and 1.25 tsp. salt. Marinate the diced leg of lamb in this mixture. Skewer and grill the kebabs, serve with tomato chutney sauce.
21. Moroccan Lamb KebabMash 3 cloves of garlic, 1 tablespoon of coriander seeds, 1 teaspoon each of cumin, paprika, and salt until smooth. Mix with 110 g of softened butter and rub the diced leg of lamb with this mixture. Thread onto skewers and grill.
22. Dolmades with lambMake kyufta (No. 3) with ground lamb. Wrap in grape leaves and thread onto skewers. Brush with olive oil and grill.
23. Israeli-style lamb kebabMix 450 g of ground lamb with 1 cup of chopped onion, 1 cup of chopped parsley, 2 teaspoons each of paprika, salt, and pepper. Form into 5 cm ovals, thread, and grill.
24. Lula kebab “Meatloaf”Form your favorite meatloaf mixture into 5cm ovals. Thread onto skewers and grill, brushing with a mixture of tomato sauce and olive oil.

25. Niçoise with chickenCombine diced chicken breast, pancetta, olives, and cherry tomatoes with olive oil, oregano, and salt. Thread onto skewers and grill.
26. Chicken Jerk KebabMarinate whole chicken thighs and large pineapple chunks in the following mixture: 2 tbsp. Jamaican jerk seasoning, 1 tbsp. vegetable oil and 2 tsp. lime juice. Thread onto double skewers and grill.
27. Chicken FajitaPuree 1/2 cup olive oil, a handful of cilantro, 2 seeded jalapeños, 2 cloves of garlic, and salt. Add diced chicken breast and marinate. Skewer with onion and sliced poblano pepper. Grill the kebabs, basting with lime juice.
28. Chicken liver kebabSoak the chicken livers in milk for 1 hour. Then drain the milk and pat the meat dry. Thread onto skewers lined with thick slices of bacon and peeled cipollini onions. Season with salt and pepper and grill.
29. Chicken sausageToss quartered peaches with vegetable oil, fresh thyme, and salt. Thread onto skewers along with ready-made chicken sausage and fry.
30. Chicken with smokeMix diced chicken breast with smoky barbecue sauce, salt, and crushed chipotle peppers in adobo sauce. Thread onto skewers and grill.

32. Chicken Curry KebabMix 2/3 cup coconut milk, 3 tbsp peanut butter, 1 tbsp each Thai curry paste Add lime juice and salt. Marinate diced chicken thighs in half the sauce. Skewer with bell pepper slices. Grill, brushing with the remaining sauce.
33. Chicken Tikka MasalaMarinate diced chicken thighs in the following marinade: 1 cup yogurt, 2 tbsp. garam masala mixtures, 1/2 cup chopped cilantro, 1.5 teaspoons each grated garlic and ginger, 1 tablespoon lime juice, salt and cayenne pepper. Thread the meat onto skewers and grill. Serve with dried apricot and date chutney.
34. Chicken teriyakiMarinate diced chicken thighs in 1/4 cup teriyaki sauce and 1 tablespoon vegetable oil. Thread onto skewers and grill.
35. Turkey kyuftaHeat 1/3 cup. cranberry sauce with 1.5 tbsp. barbecue sauce, 1.5 tbsp. water, 2 tsp. apple cider vinegar, and salt. Mix 450 g of ground turkey, 110 g of ground pork belly, and salt. Form into balls, thread onto skewers, and grill, brushing with sauce.
36. Salmon kebabMarinate diced wild salmon fillets in olive oil with chopped dill. Thread onto skewers and grill.
37. Salmon with hoisin sauceMarinate diced wild salmon fillets in the following mixture: 3 tablespoons hoisin sauce, 1 tablespoon each of soy sauce, rice wine, honey, and olive oil. Thread onto skewers with sliced green onions and grill. Serve with a side of Hoisin BBQ Sauce.
38. Shrimp kebab in GreekMarinate large shrimp in a mixture of olive oil, chopped marjoram, dill, and garlic. Thread onto skewers along with grape tomatoes and lemon wedges. Grill the kebabs and serve with feta.
39. Sesame shrimpMix 1.5 tablespoons olive oil, 1.5 tablespoons water, 2 teaspoons each of rice vinegar, toasted sesame seeds, soy sauce, and 1/2 teaspoon of sesame oil. Toss the shrimp with this sauce. Thread onto skewers and grill.
40. Spanish-style shrimp with chorizoMarinate large shrimp and sliced chorizo sausage in the following mixture: 1/4 cup each olive oil and crushed roasted red pepper, 1 tablespoon cognac, some finely chopped parsley and garlic. Wrap the shrimp chorizo circles, thread onto skewers and grill.
41. Chipotle ShrimpMix 1/4 cup. barbecue sauce, the juice of half an orange, 3 tablespoons of crushed chipotle peppers in adobo sauce, and salt. Set aside a quarter of the mixture and marinate the shrimp in the rest. Thread them onto skewers and grill, brushing them with the reserved mixture.

43. Mackerel a la planchaThread 10 cm (4 in) pieces of mackerel fillet onto skewers (make small notches across the fillets first). Brush with olive oil, season with salt, and grill. Sprinkle with smoked paprika and serve with lemon wedges.
44. Swordfish RollsSprinkle swordfish pieces with lemon juice, parsley, salt, and pepper. Top with thinly sliced zucchini, roll, and wrap in sage leaves. 48. Kebab with halloumi cheeseMarinate halloumi cubes in the following mixture: 1/4 cup olive oil, 1/2 cup chopped parsley, 3 crushed garlic cloves, 2 teaspoons each of cumin, coriander, paprika, and dried mint. Thread them on top of the green onion slices and fry.
