Ingredients:
- 2 tbsp. l. olive oil
- 4 cups cherry tomatoes
- 2 tbsp capers
- 1/4 cup chopped onion
- 0.5 tsp chili pepper flakes
- 1 teaspoon tomato paste
- 2-3 fresh basil leaves
- 1 clove garlic, cut in half lengthwise

Preparation:
- Step 1
- In a medium saucepan or skillet, heat the olive oil over medium-high heat. Add the tomatoes and capers and cook, stirring occasionally, until the tomato skins begin to crisp. Once the skins begin to burst, add the onion and chili pepper. Season with a pinch of salt and freshly ground black pepper. Step 2
- Cook, stirring gently, until the onion is softened and the tomatoes have released their juices (smash them lightly while stirring). Add the tomato paste, basil, and garlic. Stir and cook until the tomato paste is incorporated, about 5 minutes. Reduce the heat and cook until the garlic is softened, about 10 minutes. Step 3
- Remove the basil leaves and discard. Pour the contents of the pan into a blender or use an immersion blender to blend until smooth. Refrigerate the sauce to chill, and serve chilled.
