This simple, fresh pizza sauce comes together in minutes. It's perfect for when tomato season is in full swing. Combine ripe plum tomatoes with spices and olive oil, add a spoonful of tomato paste, and blend until smooth. Drain the excess liquid before spreading it on your pizza.

Ingredients:

  • 900 g very ripe plum tomatoes
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp tomato paste
  • 1 teaspoon of sugar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cut the tomatoes in half lengthwise. Press the halves over a bowl or sink to remove the seeds and liquid. Coarsely chop the remaining tomato pulp and transfer to a food processor. Add the olive oil, tomato paste, sugar, oregano, garlic, 1 tablespoon of salt, and a pinch of freshly ground black pepper and process until you have a puree with small chunks.
  • Step 2
  • Pour the mixture into a fine-mesh sieve over a bowl and allow some of the watery liquid to drain, gently shaking the tomatoes for about 30 seconds. Pour the tomato sauce into another bowl or jar and use immediately or refrigerate for up to 1 day.
