This tomato soup is ready in just 10 minutes! It requires no cooking and preserves all the beneficial properties of the vegetables. To make it, you'll need canned tomatoes in their own juice, fresh celery, and chicken broth. Simply blend everything and reheat in the microwave. Dress the soup with cream of any fat content, lemon juice, and natural maple syrup, serve with a cheese sandwich, and enjoy its rich flavor, as if the soup had been simmered for a long time. It's quick to make in the morning and take with you in a thermos to school or work.

  • 1-2 tsp freshly squeezed lemon juice
  • 1/4 - 1/3 cup cream

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a blender, puree the tomatoes, celery, and chicken broth until smooth. Season with salt and pepper to taste. Season with lemon juice and maple syrup. Add the cream.
  • Step 2
  • Pour the soup into a microwave-safe bowl. Microwave on high until heated through, about 4 minutes. Or reheat the old-fashioned way – in a saucepan. Pour the hot soup into a thermos. Pack it with your lunch and take it to school.
