Tomato sauce "Choka" - a detailed recipe.


Ingredients:

  • 8-10 washed plum tomatoes
  • Salt to taste
  • 4 cloves of garlic
  • 1/2 jalapeño pepper or Scotch bonnet
  • 2 sprigs of cilantro
  • 1/3 cup corn oil
  • 1 small onion, thinly sliced
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Thread the tomatoes onto skewers and roast over an open flame. Or cut them in half, place them cut-side down on a baking sheet, and roast under the grill.

    Bake until the skin is charred and begins to peel away from the flesh. Scrape off any charred skin. Mash the tomatoes with a fork and add salt.
  • Step 2
  • In a mortar, crush the garlic, pepper, and cilantro. Mix with the tomato puree. Heat a little oil in a frying pan and fry the onion until caramelized. Add the hot caramelized onion to the tomato mixture.
