Delicate lemon bars with a refreshing citrus flavor, beautifully enhanced by thyme, give them a Mediterranean-inspired feel. Unlike traditional lemon bars, these are very easy to make and are topped with a glaze of lemon juice and powdered sugar instead of cream. This doesn't affect the flavor at all, and the texture remains soft and moist. Bake a cake base of butter, flour, and powdered sugar, adding vanilla, lemon juice, and thyme. Once cooled, glaze with a citrus glaze. Cut the cake into small squares (bars) and serve with a cup of coffee or tea.
