Oatmeal bars with apricot filling are a true delicacy, captivating with their incredible flavor. Once you've tried one, you won't be able to stop. And they're incredibly easy to make. Mix a dough of flour, oats, and walnuts with butter, brown sugar, and egg. Line the bottom of the pan, top with apricot jam and dried apricot filling, and top with more dough. The butter, brown sugar, and oats do their job, creating a crispy crust with a slight caramel flavor that pairs perfectly with the walnuts and sticky apricot filling.

Ingredients:


Filling
  • 1 jar (370 g) apricot jam (about 1 and 1/4 cups)
  • 8 dried apricots, cut into 0.5 cm pieces (about 1/3 cup)

Dough
  • 1 and 3/4 cups flour
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon fine sea salt
  • 3/4 tsp baking soda
  • 1 and 3/4 cups rolled oats
  • 1 cup (120 g) coarsely chopped walnuts
  • 220 g butter, melted
  • 1 egg, room temperature, beaten
  • 1 tsp vanilla extract
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position a rack on the middle shelf of the oven. Preheat the oven to 350°F (175°C). Grease a 22 x 32 x 5 cm (9.5 x 13.5 x 2 in) metal baking pan with vegetable oil. Line the bottom and sides of the pan with parchment paper. Spray the parchment paper with vegetable oil spray.
  • Step 2
  • Filling: In a small bowl, combine jam and dried apricots.
  • Step 3
  • Dough: In a large bowl, whisk together the flour, sugar, salt, and baking soda. Add the oats and walnuts. Add the butter, egg, and vanilla and mix well.
  • Step 4
  • Using a fork or clean fingers, lightly press half the dough into the bottom of the prepared pan. Using a spatula, spread the filling over the top, leaving a 1/2-inch border. Top the filling with the remaining dough and gently press to even it out. Bake until golden brown, about 30-35 minutes. Cool for 1 hour. Cut into pieces and store in an airtight container for up to 3 days.
