Pizza with oriental spices - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


For pizza:

  • 3/4 cup crumbled cheese feta
  • 250 g mozzarella cheese, cut into cubes
  • 450 g yeast dough, defrosted at room temperature (For the pizza dough recipe, see here.)
  • 1/2 cup chopped canned in oil sun-dried tomatoes
  • 1 medium-sized eggplant
  • 1/4 cup pitted Kalamata olives, sliced ​​into rings
  • 1 head of red onion, cut into rings
  • 4 cloves garlic, cut into wedges
  • 5 tbsp. l. olive oil
  • 1 tsp ground Roman cumin (caraway)
  • Salt and freshly ground pepper
  • Fresh mint for garnish

For the sauce:

  • 1 kg tomatoes, diced
  • 1 onion, diced
  • 2 tbsp. l. olive oil
  • 1/2 tsp garlic powder
  • 1/4 tbsp spice sumac
  • Coarse salt and freshly ground pepper

Cooking the dish according to the recipe:


  1. Prepare the spicy sauce: Sauté the onion in olive oil over medium heat for about 5-7 minutes. Add the garlic powder, sumac, and tomatoes and cook until thickened, about 20 minutes. Season with salt and pepper to taste.
  2. Prepare the pizza filling: Cut the eggplant into lengthwise slices, then sprinkle each slice with salt and let it sit for 20 minutes to release the bitterness and water, then cut into cubes. In a preheated frying pan, stir-fry the eggplant and Roman cumin in 2 tablespoons of olive oil over medium heat for about 7-10 minutes. Add the garlic and fry for another 5 minutes. Meanwhile, heat 1 tablespoon of olive oil in another pan and fry the red onion over medium heat for 15 minutes.

  3. Prepare pizza: Grease a baking sheet with 2 tablespoons of olive oil, pour the dough into it, and spread it evenly, leaving a small gap at each edge. Brush the dough with the remaining olive oil, place the baking sheet in a preheated oven at 250°C (450°F), and bake until golden brown. After 10-15 minutes, remove the baking sheet with the dough, pour the sauce over it, top with mozzarella, the eggplant filling, and sprinkle with fried red onion, olives, sun-dried tomatoes, and feta cheese.
    Place the baking sheet back in the oven and bake until golden brown, another 15 to 20 minutes.
  4. Take out the finished one pizza with spices, mozzarella, feta cheese, and oven-baked tomatoes, and brush with oil again. Garnish with mint leaves.
