A delicious and filling homemade dish like chicken and dumplings can be easily and quickly prepared entirely in the microwave. This recipe takes less than half an hour and delivers a rich, flavorful finish. Use store-bought rotisserie chicken for this dish, and consider it halfway done. The chicken simmers in a rich broth with vegetables and soft, golden cornmeal dumplings until the dough is fully cooked. The recipe specifies cooking times for both 1100W and 700W microwaves. Follow these guidelines, and your chicken and dumplings will turn out perfectly.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Filling

  • 2 cups lightly salted chicken broth
  • 1/4 cup premium flour
  • 1 small onion, diced
  • 1 stalk celery, sliced ​​0.5 cm thick.
  • 2 tablespoons unsalted butter, cut into pieces
  • 1 sprig of thyme
  • 2 cups shredded grilled chicken (about half a chicken)
  • 1 cup frozen green pea and carrot mixture

Dough

  • 0.5 cups premium flour
  • 1/4 cup yellow cornmeal
  • 1 teaspoon baking powder
  • 0.5 tsp coarse salt
  • 1/3 cup milk
  • 2 tablespoons of vegetable oil

Cooking the dish according to the recipe:


  1. Filling:


    For an 110W microwave, combine the chicken broth and flour in a microwave-safe 8x8x2-inch baking dish or a 700W microwave in a 4-quart bowl until smooth. Add the onion, celery, butter, thyme sprig, 3/4 teaspoon salt, and a pinch of freshly ground black pepper. Cover tightly with plastic wrap; cut a small slit in the center with a knife to allow steam to escape. Microwave at 100% power for 5 minutes (1100W) or 8 minutes (700W).
  2. Remove the dish from the microwave and remove the plastic wrap (be careful not to burn yourself with hot steam). Stir the broth mixture thoroughly to remove any lumps. Return the dish to the microwave, uncovered, and cook at 100% power until the broth comes to a boil and thickens, about 5 minutes for 1100W or 8 minutes for 700W.

  3. Dough:


    Meanwhile, in a medium bowl, whisk together the flour, cornmeal, baking powder, and salt. Add the milk and butter to the center and mix with a fork until the dough just comes together (it will be sticky and crumbly).
  4. Assembly:


    Remove the dish from the microwave. Remove the thyme sprig and stir the broth again. Add the shredded chicken, frozen peas, and carrots. Scoop out 1 heaping teaspoon of dough and form into about 16 dumplings. Place them about 1 cm apart around the perimeter of the dish or bowl containing the broth. Sprinkle with freshly ground black pepper.
  5. Cover the pan tightly with a new piece of plastic wrap, cutting a small slit in the center. Microwave at 100% power until the dumplings are puffed and a toothpick inserted into the center comes out clean, about 6 minutes for 1100W or 700W. If the dumplings aren't done yet, continue cooking in 30-second intervals, checking with a toothpick between each microwave.
