Ingredients:


For chicken broth:
  • 1 chicken (1.3 - 1.8 kg)
  • 3 stalks celery, cut in half
  • 2 medium carrots, peeled and cut in half
  • 1 onion, cut in half
  • 5 medium tomatoes, cut into quarters
  • 3 sprigs of parsley
  • 3 sprigs of dill
  • 1 teaspoon coriander seeds
  • 1 teaspoon black peppercorns
  • 2 whole cloves
  • Salt

For the dumplings:
  • 4 eggs
  • 3 tbsp. grated onion
  • 1 small clove of garlic, finely grated
  • 1 teaspoon finely grated lemon zest
  • 1/4 tsp ground ginger
  • 1 tbsp finely chopped fresh dill
  • 1 tbsp chopped fresh parsley
  • 1 cup matzo meal, blended
  • Salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the broth: Place the whole chicken, celery, carrots, onions, tomatoes, parsley, dill, coriander seeds, peppercorns, cloves, and 2 teaspoons of salt in a large saucepan. Cover with cold water by 2.5 cm. Bring to a boil, reduce heat, and simmer, skimming off any foam that forms on the surface, for 3 hours. Strain the broth and let it cool until the fat rises to the surface. Skim off the fat from the surface, reserving 2 tablespoons for the batter.
  • Step 2
  • Prepare the dumplings: Beat the eggs and 2 tablespoons of chicken fat in a bowl. Add the onion, garlic, lemon zest, ginger, dill, parsley, matzo, 1/4 cup of chicken broth, and 1 3/4 teaspoons of salt. Cover the dough with plastic wrap and refrigerate for 2 hours. Then, using damp hands, form the dough into small balls.
  • Step 3
  • Bring a large saucepan of salted water to a boil. Add the dumplings and simmer until tender, about 35 minutes. Meanwhile, heat the chicken broth and ladle into bowls. Add the dumplings and sprinkle with dill.
