For chicken broth:
- 1 chicken (1.3 - 1.8 kg)
- 3 stalks celery, cut in half
- 2 medium carrots, peeled and cut in half
- 1 onion, cut in half
- 5 medium tomatoes, cut into quarters
- 3 sprigs of parsley
- 3 sprigs of dill
- 1 teaspoon coriander seeds
- 1 teaspoon black peppercorns
- 2 whole cloves
- Salt
For the dumplings:
- 4 eggs
- 3 tbsp. grated onion
- 1 small clove of garlic, finely grated
- 1 teaspoon finely grated lemon zest
- 1/4 tsp ground ginger
- 1 tbsp finely chopped fresh dill
- 1 tbsp chopped fresh parsley
- 1 cup matzo meal, blended

Preparation:
- Step 1
- Prepare the broth: Place the whole chicken, celery, carrots, onions, tomatoes, parsley, dill, coriander seeds, peppercorns, cloves, and 2 teaspoons of salt in a large saucepan. Cover with cold water by 2.5 cm. Bring to a boil, reduce heat, and simmer, skimming off any foam that forms on the surface, for 3 hours. Strain the broth and let it cool until the fat rises to the surface. Skim off the fat from the surface, reserving 2 tablespoons for the batter. Step 2
- Prepare the dumplings: Beat the eggs and 2 tablespoons of chicken fat in a bowl. Add the onion, garlic, lemon zest, ginger, dill, parsley, matzo, 1/4 cup of chicken broth, and 1 3/4 teaspoons of salt. Cover the dough with plastic wrap and refrigerate for 2 hours. Then, using damp hands, form the dough into small balls. Step 3
- Bring a large saucepan of salted water to a boil. Add the dumplings and simmer until tender, about 35 minutes. Meanwhile, heat the chicken broth and ladle into bowls. Add the dumplings and sprinkle with dill.
