This crustless quiche has just enough eggs to give it a quiche-like feel, but its bulk is made up of a surprise ingredient: pancake mix! This original quiche recipe from dry baking mix maker Bisquick was incredibly popular in the 1960s and 1970s, and like all trends, it has made a comeback as a quick, easy, and foolproof option for any home cook. The filling here includes bacon, onions, and cheese, but you can use other ingredients to suit your tastes.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 450 g thick slices of bacon
  • 4 large eggs
  • 0.5 tsp coarse salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp. pancake mixes
  • 2 cups heavy cream or whole milk
  • 2 cups grated cheddar
  • 1 small yellow onion, diced

Cooking the dish according to the recipe:


  1. Position a rack in the middle of the oven and preheat the oven to 200°C (400°F). Spray a 9-inch (23 cm) pie pan with cooking spray.
  2. Meanwhile, in a large nonstick skillet over medium heat, fry half the bacon, turning occasionally, until crisp, about 8 minutes. Transfer to a paper towel-lined plate, then carefully drain. Fry the remaining bacon in the same manner. Let cool, then cut into 1/2-inch pieces.

  3. Combine the eggs, salt, and pepper in a large bowl and whisk thoroughly. Add the pancake mix and whisk until smooth (minus some lumps). Add the heavy cream and whisk again until smooth, then add the cheddar, onion, and chopped bacon.
  4. Spoon the filling into the prepared pie pan. Bake until the top is golden brown and the center is set, about 40 minutes. The quiche will rise in the oven but will fall as it cools.
  5. Transfer the quiche to a wire rack and let cool for at least 15 minutes, then slice and serve.
