Instead of buying pre-made pancake mix, make your own! This recipe gives you the perfect proportions of dry ingredients for delicious pancakes. Simply mix them together in a large container and use them whenever you want to make pancakes, adding only eggs, buttermilk, and butter. Remember to shake the container thoroughly before each use, and the mix will keep for up to three months. It's convenient to have on hand. You can also pour it into a pretty jar, attach the pancake recipe, and give it as a gift.


Ingredients:


Dry mix
  • 6 cups premium flour
  • 1.5 tsp of baking soda
  • 3 tsp baking powder
  • 1 tbsp coarse salt
  • 2 tablespoons of sugar

Quick pancakes
  • 2 eggs, whites separated from yolks
  • 2 cups of sour milk or kefir
  • 60 g melted butter
  • 2 cups ready-made pancake mix, see recipe above
  • 110 g butter to grease the pan
  • 2 cups fresh berries, such as blueberries (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine all ingredients in a container, close the lid, and shake to combine. Use the prepared mixture within 3 months..
  • Step 2
  • Quick pancakes


    Heat a griddle or griddle to 350°F (175°C). Preheat oven to 205°F (95°C).

    In a small bowl, whisk the egg whites with the sour milk. In another bowl, whisk the egg yolks with the melted butter.

    In a large bowl, combine the sour milk mixture with the yolks. Pour the liquid mixture over the dry pancake mixture. Using a whisk, mix the batter until smooth, but do not over-beat. Don't try to break up all the lumps.
  • Step 3
  • Check if the pan is hot by sprinkling a few drops of water on it. If the water sizzles, it's ready to fry.

    Lightly grease the pan with butter. Rub it thoroughly with a paper towel. The butter should not be visible.
  • Step 4
  • Carefully pour the pancake batter into the pan and sprinkle with berries, if desired. When bubbles begin to form around the edges and the bottom is golden, carefully flip the pancake over. Continue cooking for another 2-3 minutes, or until the pancake is set.

    Serve immediately or place on a towel-lined baking sheet and cover with a towel. Bake in a warm oven for 20-30 minutes.
