Give homemade beef patties the flavor of Spanish chorizo by adding smoked paprika, coriander seeds, and red pepper flakes to the coarsely ground beef. The coriander seeds should be lightly crushed to release the flavor, but still remain noticeable when eaten. Serve the patties on buns topped with roasted bell peppers.

Cooking the dish according to the recipe:
- Heat a large cast-iron skillet over medium heat for 20 minutes. Meanwhile, carefully combine the two ground meats in a large bowl, being careful not to over-compact the mixture.
- In a small bowl, combine the paprika, coriander seeds, garlic, brown sugar, crushed red pepper, and 1/4 teaspoon salt. Sprinkle the spice mixture over the beef and gently toss to distribute evenly. Form the ground beef into four patties, each 2 cm thick and approximately 10 cm long. Season generously with salt and pepper on both sides.
- Place the patties in the hot skillet; do not press them with a spatula. Once the patties are cooked and browned on one side, flip them over and cook the other side until golden brown, about 3.5 minutes per side for medium-rare.
- Assemble burgers on buns, topping the patties with sliced roasted red peppers and your favorite sauce.
