An interesting way to prepare avocados that aren't ripe enough for guacamole or salads. Thin slices are tossed with jalapeños, cilantro, and lime zest, then marinated in a spicy cumin and coriander marinade. Thanks to their neutral flavor, the avocado slices will easily absorb the flavors of the other ingredients, which are combined in a Mexican-inspired way. However, you can use any spices you like. The marinated avocado can be served within two hours as an appetizer that will impress your guests, or used in Mexican burritos, tacos, or quesadillas.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 ripe but firm avocados
  • 0.5 cups distilled white vinegar
  • 1 tbsp coarse salt
  • 1 tbsp. sugar
  • 0.5 tsp whole coriander seeds
  • 0.5 tsp whole cumin seeds
  • 6 fresh sprigs of cilantro
  • 1 clove garlic, thinly sliced
  • Half a jalapeño or serrano pepper, seeded and stemmed, and cut into thick strips
  • Zest of 1 lime, peeled with a vegetable peeler

Cooking the dish according to the recipe:


  1. Combine vinegar, salt, sugar, coriander seeds, cumin seeds, and 0.5 cups of water in a small saucepan and bring to a boil, stirring constantly to dissolve the salt and sugar. Remove from heat and let cool to room temperature.
  2. Halve the avocado, peel it, and slice it into 1-cm-thick slices. Place the avocado slices in a wide-mouthed glass jar along with the cilantro sprigs, garlic, jalapeño, and lime zest.

  3. Pour the cooled marinade over the jar and close the lid. Carefully turn the jar upside down and swirl it to evenly combine the spices, avocado, and brine. Refrigerate for at least 2 hours. Marinated avocado slices can be stored, tightly covered, for up to 1 week..
