On a weekend, treat your loved ones to a fun breakfast of fried eggs in potato nests. To make it, you'll need a muffin tin, eggs, and some cooked potatoes, which you can bake the night before and grate. The grated potatoes are placed in each cavity of the muffin tin, baked, then the nests are filled with eggs and baked again until the eggs are set and the edges of the potato nests are crispy. It's a delicious, filling, and mouth-watering treat. Children will especially love it served this way.

Cooking the dish according to the recipe:
- Preheat oven to 200°C.
- Bake the potatoes until tender, 45 minutes to 1 hour. Let them cool, then peel and grate them. Season generously with salt and pepper.
- Preheat oven to 425°F (220°C). Spray two 12-cup muffin tins with cooking spray.
- Scoop 3-4 tablespoons of grated potato into each cavity of the baking dish. Press gently with your fingers, pressing the potato into the bottom and sides of each cavity to create nests. Spray again with cooking spray. Bake for 15-20 minutes. Keep an eye on the nests to prevent them from burning.
- Let the nests cool and reduce the oven temperature to 200°C. Then crack an egg into each nest. Sprinkle with salt and black pepper and bake until the whites are set, about 15 minutes.
