Before pan-frying, soak cod (or other white fish) fillets in a milk and egg mixture. This mixture will hold the delicate fish together, preventing it from falling apart in the pan, and also acts as an excellent "glue" for the breading of crushed crackers mixed with flour and cayenne pepper, in which the cod is then rolled. The cracker breading creates a very crispy, delicious crust with a slight savory note, while the meat inside is juicy and tender. Serve the fried cod with grainy mustard and apple coleslaw.
