In the 1920s, more than 1,200 people would gather at the Brown Hotel in Louisville each evening, dancing the night away. By the time the party ended in the wee hours, the crowd was already hungry. That's when the hotel's chef, Fred Schmidt, created this turkey and bacon sandwich with Mornay sauce. The hotel still serves this sandwich, but you can also make it at home. Crumble some fried bacon on top so you get it in every bite.

Cooking the dish according to the recipe:

  1. Preheat oven to broil. Cook the bacon in a large skillet over medium heat until crisp, about 10 minutes. Transfer to a paper towel-lined plate. Discard most of the fat from the skillet, reserving 1 tablespoon.
  2. Prepare the sauce:

Add the onion to the skillet and cook, stirring, until softened, about 3 minutes. Add the flour and cook, stirring, for another 1 minute. Increase the heat to medium-high, add the milk and chicken broth, and bring to a boil, stirring. Reduce the heat to medium-low and cook, stirring, until the sauce thickens slightly, about 6 minutes. Remove from the heat and stir in 1 cup of cheese. Season with salt and pepper to taste.

  3. Place the bread on a baking sheet. Spread each slice with mustard, then drizzle with a little sauce and top with tomato. Add the turkey to the pan with the remaining sauce and toss. Divide the turkey in the sauce among the bread slices, then sprinkle with the remaining 1/4 cup cheese. Grill until golden brown, about 2 minutes. Crumble the bacon over the sandwiches. Sprinkle with parsley.
