A delicious and healthy sandwich made with whole-grain bread and a spread of baked garlic and fresh herbs. You can make these sandwiches for a snack or as an appetizer at a holiday table. The combination of ingredients is quite unusual. Oven-roasted garlic not only gives it a soft texture but also a milder flavor, which, when combined with herbs and cheese, becomes amazing. Toast the sandwiches in the oven using the broiler setting until they're covered in a cheesy crust, and enjoy.

Ingredients:

  • 1 whole grain baguette or hoagie roll (120g), cut in half lengthwise
  • Half a head of garlic, cut horizontally
  • 2 tsp olive oil
  • 2 tbsp chopped fresh parsley
  • 2 tsp chopped fresh thyme
  • 1.5 tbsp finely grated Parmesan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C.

    Place the garlic on a double-sided sheet of aluminum foil, drizzle with 0.5 teaspoon of oil, and fold the foil over the garlic, wrapping it tightly. Place the garlic directly on the oven rack and roast for about 1 hour. Unwrap the garlic and set it aside to cool slightly and handle, about 5 minutes.

    Note

    Cut the head of garlic in half horizontally, exposing the cut ends of all the cloves. For this recipe, use the bottom half, and set the top half aside for another use.
  • Step 2
  • In a small bowl, combine the parsley, thyme, and remaining 1.5 teaspoons of olive oil. Use a knife to peel the roasted garlic cloves and add them to the bowl with the herbs. Mash with a fork until smooth. Spread the mixture evenly over the baguette halves and sprinkle with Parmesan and salt to taste.
  • Step 3
  • Place on a baking sheet and broil in the oven (about 6 inches from the broiler) until the cheese on top is golden brown, about 2 minutes. Cut the sandwiches into 4 pieces and serve warm.
