This filling is inspired by the popular Mexican dish "papas con chorizo"—a combination of potatoes and chorizo. Be sure to buy fresh, uncooked chorizo.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 medium red potatoes, peeled and cut into 2.5cm cubes
  • 1 medium yellow zucchini, diced
  • Salt and freshly ground pepper
  • 230 gr. chorizo or other spicy sausage
  • 2 medium-sized tomatoes, diced
  • 1 jalapeño pepper, seeded and chopped
  • 1/4 tbsp. cotija cheese or cheese feta
  • 1 green onion, cut into rings
  • 8 corn tortillas (recipe corn tortillas, recipe wheat tortillas)
  • 2 tablespoons of vegetable oil
  • 1/3 cup cilantro, chopped
  • Salsa sauce for serving (For the salsa recipe, see here.)
  • Sour cream and/or avocado guacamole, for serving

Cooking the dish according to the recipe:


  1. Place the potatoes in a microwave-safe bowl, add 1/2 cup water, and season with salt. Cover and microwave for 5 minutes.
  2. Meanwhile, heat vegetable oil in a shallow frying pan, add the zucchini, and fry over high heat until crisp, 3-4 minutes. Season with salt and pepper and transfer to a separate bowl.

  3. Add the sausage to the same pan and lightly fry, breaking it up with a spatula, for 3-4 minutes. Add the potatoes with the cooking liquid and simmer until the sausage is cooked through, another 5-6 minutes. Season with salt.
  4. Mix tomatoes in a bowl, green onions, jalapeno pepper and cilantro, add salt.
  5. Heat a shallow frying pan and warm the tortillas on both sides without adding oil, or wrap in a damp towel and warm in the microwave for about 1 minute.
  6. Place zucchini and chorizo-potato mixture on tortillas, sprinkle with cheese, and garnish with salsa. Top with sour cream.
