Ingredients for the recipe:


  • 3 whole grain pitas with pockets (15 cm diameter)
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup olive oil
  • 1 large head romaine lettuce, torn into bite-sized pieces (about 6 cups)
  • 1 cup chopped parsley
  • 1/4 cup chopped green onions
  • 0.5 cup chopped mint leaves
  • 1 cucumber, seeded and thinly sliced ​​into half-moons
  • 2 cups grape tomatoes, halved
