A recipe for grilled chicken club sandwiches. Chicken with mayonnaise, fresh herbs, and celery is layered on toasted bread. Topped with potato chips, fried bacon, tomato slices, and lettuce. The sandwiches are cut diagonally and served with chips and pickles.

Ingredients:

  • 3 cups shredded grilled chicken (skinless)
  • 6 slices of bacon
  • 1/2 cup mayonnaise, plus a little extra for greasing
  • Juice of 1 lemon
  • 1 stalk celery, finely chopped
  • Coarse salt and freshly ground pepper
  • 12 slices white sandwich bread, crust removed
  • 3 cups potato chips, plus extra for garnish
  • 1 tomato, thinly sliced
  • 3 tbsp. of various chopped herbs (for example, dill, chives and/or parsley)
  • 1 small bunch watercress, stems removed
  • Lettuce leaves lettuce for decoration
  • Pickles for garnish
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large skillet over medium heat, fry the bacon for 8 minutes until crisp. Drain on paper towels. Tear each slice into two pieces.
  • Step 2
  • Meanwhile, in a large bowl, combine the mayonnaise, lemon juice, herbs, and celery. Add the chicken. Season with salt and pepper.
  • Step 3
  • Toast the bread and spread it with mayonnaise. Spread half the chicken salad on 4 slices of bread.

    Top with some potato chips, 1 slice of bacon, 1 slice of tomato, some lettuce, and watercress. Top with another slice of toast. Layer all the ingredients again to make 4 double-decker sandwiches.

    Gently press each sandwich and cut in half. Serve with pickles and potato chips.
