A Mexican-style casserole with grilled chicken, corn chips, and beans, tossed in a creamy sauce and green tomatillo salsa. First, prepare the creamy sauce and toss it with chopped grilled chicken, canned beans, and salsa. Then layer the chips, chicken in the sauce, and shredded cheddar in a baking dish. Bake in the oven until the cheese is melted and crispy, and serve. This casserole is just the right amount of spicy, filling, and delicious.


Ingredients:

  • 2 tbsp (30 g) butter + extra for greasing the pan
  • 1 bunch green onions, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp. flour
  • 1 tsp ground cumin
  • 0.5 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1.5 cups lightly salted chicken broth
  • 1 cup heavy cream
  • 1.5 cups green salsa
  • 3 tbsp. grilled chicken, diced, skinless
  • 1 can (425g) of canned white beans, drained and rinsed
  • 1 cup fresh cilantro + extra for serving
  • 240 g tortilla chips, coarsely crushed (about 4 cups)
  • 2 cups grated mild cheddar (about 240 g)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position a rack in the upper third of the oven and preheat to 400°F (200°C). Melt the butter in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 2 minutes. Sprinkle with the flour, cumin, oregano, and cayenne pepper and stir to coat the onions evenly. Add the chicken broth and heavy cream and bring to a simmer. Cook until slightly thickened, about 2 minutes. Stir in the salsa and remove the pan from the heat. Add the chicken, white beans, and 1 cup of cilantro.

  • Grease a 3-quart baking dish with butter. Line the bottom with a third of the tortilla chips. Top with half of the chicken mixture. Top with another layer of tortilla chips and sprinkle with half of the cheese. Then layer the remaining chicken mixture, tortilla chips, and cheese. Cover with foil and bake for 30 minutes. Then remove the foil and bake until golden brown and bubbly, about 10 minutes. Sprinkle with cilantro.
