If you're stuck at home in bad weather without fresh vegetables or meat, open your kitchen cabinets and whip up a delicious Mexican-style casserole with what you have, a family-friendly delight. You'll need canned beans and corn, canned tomatoes in their own juice, store-bought tomato sauce, rice, corn chips, and spices. Layer all the ingredients in a baking dish and bake in the oven. The flavor is incredible: chipotle peppers add a subtle smoky flavor, while chili powder adds a piquant flavor and helps thicken the sauce.


Ingredients:

  • 0.5 cups of parboiled white rice
  • 1 can (430 g) canned chopped tomatoes
  • 1 tbsp chili powder
  • 1 tbsp. white vinegar
  • 1 small chipotle pepper in adobo sauce, ground to a paste
  • 8 cups corn tortilla chips
  • 1 can (430 g) canned black beans, rinsed
  • 1 can (311 g) canned corn, rinsed
  • 1 can (230 g) of canned creamed corn
  • 1 cup store-bought salsa
  • 1/2 cup chopped pickled jalapeno peppers
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • Cook rice according to package directions; let cool.
  • Step 3
  • Meanwhile, in a large skillet, combine tomatoes, 2 cups water, chili powder, vinegar, chipotle peppers, and 1/2 teaspoon salt. Bring to a simmer over medium heat, then cook, stirring frequently, until the sauce thickens (similar to canned tomato sauce) and the chili powder flavor has mellowed, 12-15 minutes.

  • Spoon the sauce into a 9 x 13-inch baking dish. Add 6 cups of tortilla chips and toss to combine. Crush the remaining chips and set aside.

  • Top the chips with cooked rice, then beans and corn. Finally, spread the creamed corn evenly over the top. Cover the dish with foil and bake until set, 25-30 minutes. Drizzle with salsa, garnish with jalapeño rings, sprinkle with crushed chips, and serve.
