Ingredients for the recipe:
- 500-600 g of ground turkey
- 120g pepperoni sausage, finely diced (about 1 cup)
- 1 large branch rosemary or sage, separate the leaves from the branch and chop finely
- 1 clove of garlic, finely grated
- Coarse salt and freshly ground pepper
- 1/3 cup mayonnaise
- 1/2 cup chopped fresh parsley and/or basilica
- 1/2 teaspoon finely grated lemon zest and 2 teaspoons freshly squeezed lemon juice (from 1 lemon)
- 8 slices provolone cheese
- 4 onion buns, each cut into halves
- 4 slices of tomato (preferably ox heart)
- Lettuce leaves

Cooking the dish according to the recipe:
- Place the ground turkey in a large bowl, add the pepperoni, rosemary, half the garlic, and 1/2 teaspoon each of salt and pepper. Mix until smooth. Form the ground turkey into four 1/2-inch-thick round patties.
- Heat a cast-iron skillet to medium-high heat. Place the patties in the skillet and cook, undisturbed, for 5 minutes. Flip the patties over and cook for another 3 minutes, until golden brown.
- Meanwhile, combine the mayonnaise, parsley, lemon zest, lemon juice, and remaining garlic in a bowl. Season with salt and pepper to taste. Top each patty with 2 slices of cheese, cover the pan, and continue cooking until the cheese melts, about 1 minute. Transfer the patties to a serving platter.
- Toast the buns in the same pan, then spread them with the mayonnaise mixture. Place lettuce leaves, patties, and tomato slices on the bottom halves of the buns, season with salt and pepper. Then top with the top halves of the buns.
