These delicious whole-grain Italian calzone-style pies are a favorite with kids and adults alike, and they're easy to keep in the freezer for quick baking without defrosting. The filling of these pies includes everything we love about pepperoni pizza: savory sausage and plenty of gooey cheese. Enjoy them as a snack or with a green salad for lunch or dinner.

Ingredients:

  • 0.5 cups grated semi-skimmed mozzarella
  • 0.5 cups semi-skimmed ricotta
  • 1/4 tbsp. grated parmesan
  • 110 g pepperoni slices, cut into thin strips
  • 1 large yolk + 1 large egg, lightly beaten
  • 450g whole grain pizza dough (see recipe)
  • Whole grain flour for dusting
  • 1/3 cup prepared pizza sauce (see recipe)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C and line a baking sheet with parchment paper.
  • Step 2
  • Pepperoni filling:

    In a small bowl, combine mozzarella, ricotta, Parmesan, pepperoni, egg yolk and 1/4 teaspoon salt.

    Note

    Choose pepperoni sausage with a fine grain, bright red color, and smoky flavor; it's best suited for pizza-flavored toppings.
  • Step 3
  • Divide the dough into eight equal pieces. Lightly flour a clean work surface and roll each piece of dough into a 12-cm (5-in) circle. Spoon 2 heaping tablespoons of filling into the center and pour about 2 teaspoons of sauce over it. Brush the edges of the dough with beaten egg and fold them in half. Crimp the edges. Place the pie on the prepared baking sheet. Repeat with the remaining dough, filling, and sauce. Brush the pie with egg wash and make a 2-cm (0.7-in) slit in the center of each pie. At this stage, the pies can be frozen for up to 1 month..
  • Step 4
  • Bake the pies until golden brown and the filling is bubbling, 24–28 minutes. Let the pies cool for a few minutes and serve.

    Baking pies from the freezer:

    Bake the pies, without defrosting, until the filling is heated through, 25–29 minutes.
