This sweet and spicy snack with a smoky hint from chipotle peppers will appeal to anyone looking to step outside the traditional salted peanuts and explore a new flavor combination. It's a great beer snack or a great on-the-go snack.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Chipotle Spice Mix

  • 1 tbsp. sugar
  • 2-3 tsp ground chipotle pepper
  • 1 teaspoon ground coriander
  • 1 tsp ground cumin
  • 1 teaspoon freshly grated lime zest
  • 1/4 tsp granulated garlic

Peanut

  • 4 cups unsalted raw peanuts
  • Protein of 1 large egg
  • Vegetable oil to grease the baking sheet

Cooking the dish according to the recipe:


  1. Chipotle Spice Mix:

    Combine sugar, chipotle powder, coriander, cumin, lime zest, garlic and 1 1/2 teaspoons salt in a small bowl and set aside.
  2. Preheat oven to 175°C, lightly grease a baking sheet with vegetable oil.

  3. Place the egg white in a large bowl and whisk until foamy. Add the peanuts and stir to coat. Add the spice mixture and stir to coat.
  4. Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15-20 minutes. Let cool on the baking sheet, then transfer to a large bowl.
