Oven-baked chicken wings are a healthier alternative to fried ones. When cooked properly, they're just as juicy on the inside and crispy on the outside, but without a ton of oil. Plus, you won't have to constantly stand over the stove. Before baking, marinate the wings for a couple of hours in sour milk (or kefir), adding a mixture of onion and garlic powder, and dried dill. They'll turn out very tender and delicious, with a deliciously golden crust. For dipping, try making a sour milk ranch with spicy chipotle sauce, which adds a savory, smoky flavor.


Ingredients:

  • 1.3 kg chicken wings, cut at the joints (discard the tips)
  • 0.5 cup mayonnaise
  • 1 tbsp. apple cider vinegar
  • 1 teaspoon of sugar
  • 1 teaspoon chipotle hot sauce
  • 1 tbsp chopped fresh chives
  • 1 tbsp + 1 tsp onion powder
  • 1 tbsp garlic powder
  • 1.5 tsp. dried dill
  • 1.5 cups + 2 tablespoons of sour milk or kefir
  • 1 small onion, thinly sliced
  • Vegetable oil for greasing
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small bowl, combine the onion powder, garlic powder, dried dill, 1 teaspoon salt, and 1/2 teaspoon black pepper. Place the wings in a larger bowl and toss with 1.5 cups of buttermilk, sliced ​​onions, and 1 teaspoon of the spice mixture. Cover and refrigerate for 2 hours. Then drain and discard the onions.
  • Step 2
  • Preheat oven to 220°C. Grease a rimmed baking sheet with vegetable oil. Toss the wings with almost all of the remaining spice mixture, setting aside 1 teaspoon, and place them on the baking sheet. Bake until golden brown, about 45 minutes.
  • Step 3
  • Meanwhile, prepare the chipotle ranch dressing. In a bowl, combine the mayonnaise, remaining 2 tablespoons of buttermilk, vinegar, sugar, hot sauce, and green onions. Add the reserved 1 teaspoon of seasoning and salt to taste. Cover and refrigerate until ready to serve.

  • Transfer the wings to a platter and serve with the sauce.
