For the wings:
  • 1.4 kg chicken wings, cut at the joints, wing tips removed
  • 4 stalks celery, cut into large slices
  • 4 carrots, coarsely chopped
  • 2 bay leaves
  • 1 cup lightly salted chicken broth
  • 1/2 cup hot sauce
  • 2 tbsp paprika
  • 2 tbsp (30 g) butter
  • 1 tbsp. honey

For the dipping sauce:
  • 3/4 cup Greek yogurt
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons mayonnaise
  • 1 clove of garlic, chopped
  • 1 tbsp. low-fat milk (0.5% fat) or buttermilk
  • Juice of half a lemon
  • Salt and freshly ground pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the dipping sauce: Combine yogurt, blue cheese, mayonnaise, garlic, milk, and lemon juice in a food processor. Season with salt and pepper. Cover and refrigerate.
  • Step 2
  • Prepare the wings: Preheat oven to 220°C (425°F). Grease a baking sheet with vegetable oil. Place the chicken wings in a deep frying pan, add 3 pieces of celery, 3 pieces of carrots, bay leaves, hot sauce, paprika, butter, honey, chicken broth, and 1/2 cup of water. Bring to a boil and simmer over medium heat until half-cooked, about 18 minutes. Transfer the wings to the baking sheet and spread them out into a single layer.

  • Place the wings in the oven and bake on both sides until golden brown and crispy, 30-35 minutes. Meanwhile, continue to simmer the remaining sauce over low heat until thickened, about 15 minutes. Then remove the celery, carrots, and bay leaves from the sauce. Transfer the baked wings to the skillet and toss with the remaining sauce.

    Slice the remaining celery and carrots into strips and serve with the baked buffalo wings and dipping sauce.
