The combination of spices adds a touch of piquancy to the dish, which cooks with a delicious sizzle thanks to the vegetable oil, sugar, and fat released from the chicken. You can enhance the chicken's flavor by adding smoked salt instead of regular salt.


Ingredients:

  • 1.8 kg (4 lbs) frozen chicken wings (about 24), separated at the joints, ends removed
  • 1/4 cup chili powder
  • 1/4 cup brown sugar
  • 1 tsp chipotle powder
  • 1/4 cup vegetable oil
  • 1/2 cup cilantro, chopped
  • 1 lime, cut into wedges
  • Special device: a 50 cm wide sheet of thickened aluminum foil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium bowl, whisk together the chili powder, sugar, chipotle powder, 1 teaspoon salt, and 1/2 teaspoon pepper. Place the wings in a large bowl, toss with vegetable oil, and sprinkle with the dry spice mixture. Toss to coat evenly. Cover with plastic wrap and refrigerate for at least 1 hour (up to 2 hours).

  • Preheat grill to high heat.

  • Tear off four sheets of heavy-duty aluminum foil, measuring 50 cm by 50 cm. Remove the wings from the bowl and let any excess liquid drain. Arrange the wings on the sheets of foil, centering them in a single layer. Sprinkle the wings with a good pinch of salt and pepper.

    Bring two opposite edges of a sheet of foil together and fold twice to seal, then fold the remaining sides under to create leak-proof pouches.
  • Step 4
  • Grill over high heat, turning once, until the wings are cooked through, about 25 minutes. Carefully open the bags (hot steam will escape). Sprinkle with cilantro and serve with lime wedges.
