This light kofta and tomato dish, baked on a single baking sheet, is perfect for a quick weeknight dinner. You can use ground lamb, beef, or a combination of both. Spices like turmeric and sumac, along with fresh cilantro, add a delightful flavor. While kofta is typically grilled or pan-fried, this oven-baked version is less greasy and less messy. Serve with steamed rice, lavash, or a green salad.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 large yellow onions
  • 450 g of ground lamb or beef
  • 1 teaspoon turmeric
  • 1 teaspoon sumac
  • 1 cup chopped fresh cilantro
  • 4 plum tomatoes

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C. Line a baking sheet with foil and spray with cooking spray.
  2. Grate 1 onion coarsely into a large bowl. Add the ground meat, turmeric, sumac, 1 teaspoon salt, and 0.5 teaspoon black pepper. Mix thoroughly with your hands or a spoon. Add the cilantro and mix again.

  3. Wet your hands with water (to prevent the meat mixture from sticking to your palms), divide the mixture into 8 portions, and form into oval patties. Place the patties on the prepared baking sheet.
  4. Quarter the tomatoes and chop the remaining onion into large pieces. Place both on the baking sheet between the patties. Season with salt and pepper. Bake until the kofta is cooked through and the vegetables are tender, about 20 minutes. Turn the oven to broil and cook until the vegetables are lightly charred in spots and the kofta is golden brown, 2-3 minutes.
