The most delicious part of this dessert granola with carrots and dried pineapple is the yogurt-glazed raisins. They're a nod to the cream cheese frosting found on classic carrot cake. This granola is perfect for desserts, such as drizzled over vanilla ice cream or yogurt.

- 3 tablespoons light brown sugar
- 3 tablespoons maple syrup
- 1 tsp vanilla extract
- 0.5 tsp ground cinnamon
- 0.5 tsp coarse salt
- 1 and 3/4 cups rolled oats
- 2 large carrots, grate and squeeze out the juice
- 1 cup chopped walnuts
- 0.5 cup yogurt-glazed raisins
- 1/3 cup chopped dried pineapple
